Case Introduction
The client is a coastal country in Asia with an extensive coastline. The vast sea area provides a habitat for various marine organisms, while the unique environment where saltwater and freshwater meet fosters the growth of numerous fish and seafood species. In particular, this rich aquatic region is abundant with prawns and tiger prawns. Ice Spring provided the client with a comprehensive solution for pre-cooling, quick-freezing, and storage of aquatic products.
When the fishermen return fully loaded, the freshly caught shrimp first undergoes cleaning and manual sorting. It then goes through a strict processing procedure: high-temperature steaming to lock in the freshness and flavor of the shrimp meat; followed by two-stage pre-cooling technology-first using ambient temperature water for cooling, and then ice water cooling-to maximize the retention of freshness and taste.
Once cooled, the cooked shrimp are sent to an automatic grading machine where they are categorized based on size. Subsequently, different products enter the impingement freezing tunnel. This is an advanced device with rapid cooling and ultra-low temperature characteristics, specifically suitable for the quick-freezing needs of various types of products. Within just one hour, this equipment can efficiently freeze up to 1500 kilograms of shrimp, ensuring that the core temperature of each frozen shrimp drops to -20°C, thereby locking in freshness and flavor.
After the quick-freezing process, the products go through water spraying to form an ice glaze. This not only effectively prevents moisture loss during long-term storage but also further extends the shelf life. Finally, these carefully processed shrimp are meticulously packed, neatly boxed, and stored in cold storage or quickly shipped worldwide via a cold chain logistics network. Through this series of rigorous and meticulous processing procedures, the fresh beauty of Vietnamese shrimp is preserved, bringing a feast for the taste buds to food lovers around the globe!
